NOW ON THE SIDE OF PREPPING WE HAVE NOT COVERD JERKEY ENOUGH AND I FEAR IT'S LACKING IN MANY PREP'S MOST OF YOU A FAMILER WITH THE SUMMERSAUSAGE STYLE JERKY WE ALL BUY IN STORE'S . THE TYPE OF JERKY I'M TALKING ABOUT FOR PREP'S IS DRY JERKY AND I MEAN DRY HERE IS HOW I DO IT
- FIRST YOU WILL WANT ANY LEAN MEAT TRIM ALL THE FAT OFF (THAT'S WHAT GO'S BAD-RANSID) BEEF , CHICKEN. DEER , ELK ,TURKEY .
- NEXT YOU WANT TO PUT IT IN THE FREEZER AND FREEZE TILL ICE CYSTALS FORM I;E REALY STIFF .
- THEN WHILE IT'S FREEZING YOU WANT TO MIX TOGETHER --20 - 40OZ SOY SAUCE --20-40 OZ WISASHERE SAUCE --2-4 TABLESPOONS EACH --GARLIC POWDER ,PEPPER ,ONION POWDER .
- 1 CUP BROWNSUGER
- 1 5OZ BOTTLE LIQUED SMOKE
- 1 20 OZ BOTTLE COKE
- 2 TABLESPOONS TOMATO PASTE
- MIX ALL INGRENTS TOGETHER WELL IN LARGE BOWL
- NEXT THIN SLICE ALL MEAT NO THICKER THAN 1/8 INCH(YOU CAN HAVE THIS DONE AT THE STORE YOU BOUGHT THE MEAT) PLACE MEAT IN MIXTURE ,STIR
- PLACE MEAT IN ZIPLOCK BAGS AND COVER WITHE MIXTURE.
- PUT BAGS IN LARGE BACKING DISH IN FRIDGE
- LEAVE THERE 24-48 HRS TURNING AND SHACKING BAGS AT LEAST 4 TIMES A DAY.
- OVEN PREP IS AS FOLLOWS REMOVE RACKS
- CLEAN RACKS WITH SOAP AND WATER
- COVER BOTTOM OF OVEN IN FOIL (CHANGE AS NEEDED TO PREVENT BURNNING)I MAKE MINE INTO A BOWL SO DRIPPINS DONT SPILL.
- I LIKE TO TAKE A METAL COAT HANGER AND MAKE HANGERS FOR SHISKABOB SKEWERS ON BOTTOM OF MY RACKS SO I CAN DRY MORE AT ONE TIME MAKING SURE NO MEAT IS TOUCHING EACH OTHER .IF YOU HAVE A LARGE OVER YOU CAN GET 2 RACKS IN IT .
- OR YOU CAN PLACE MEAT DIRECTLY ON RACKS MAKING SURE NO MEAT IS TOUCHING EACH OTHER.
- HANG OR LIE MEAT ON RACKS (I PAT MINE DRY WITH A RAG)
- SET OVEN AT 160-170 DEG
- DRY AT LEAST 8 HRS OR UNTELL MEAT SPLINTERS WHEN BENT.
- PLACE DRYED MEAT IN BACKING PAN TO COOL WHEN COOL VACUEM SEAL IN QUINTY OF CHOICE .STORE IN COOL DRY PLACE OR FREZE.
THIS JERKY IS EXTREAMLY DRY AND CAN BE EATEN AS IS OR PLACED IN STEWS,CHILI OR ANY OTHER DISH --AS ALWAYS KEEP YOUR POWDER DRY--MAGGOG

Thanks for the awesome post and the beef jerky recipe - I copied and printed it for my recipe book - hope you don't mind!
Now I am off to read the rest of your posts - I sure do hope that they are as good as this one (but that's alot to live up to! haha!)
